When nothing in the catalogue fits, the itinerary is written from scratch: the varieties you care about, how technical you want it, the pace of the day, dietary needs, budget and how many glasses you want poured. It can be one day or a full week, with hotels and restaurants coordinated.
Most of my returning guests end up here. It is where the curation shows in full: I choose the wineries one by one for that specific person.
